Turning off "Display Num"

this can be controlled by the several "Pagination" settings within the parameters - the right section depends on where you want that pagination to be displayed and where not.
If setting the Pagination Default Value to 0 there is no pagination displayed anymore.

Ah, sorry, my mistake - this was the wrong parameter

You have a menu item calling the photo gallery, and this menu item has a separate set of parameters. Look into the menu item definition, into the first section with the basic parameters. There you'll see 4 parameters - 2 for Show Pagination and 2 for Display Select. Set all of them to Hide and it should work.
