Hi, you can set own layouts with help of Joomla! template overrides, see Joomla! guides how to override output of extension templates.

You can see:
https://www.phoca.cz/phocacartdemo/phoca-gallery - which is Phoca Gallery output and this you can somehow customize in your new template override
