Hi people,

I've just inherited this site and I'm still a Joomla newbie.

I want to change some text and change a video to this categories page

From what I can tell, the Menu link just points to categories view for Phoca

I can't find how to edit the page to change the text or change the youtube video.

I'm not sure what you want to change in particular, but maybe you need to edit a category in PhocaGallery?
