if the phoca gallery is not assigned to a menu, can I still find the right links to the phoca categories and how to make them work?

the pictures are already inside categories in phoca, however I was to make my own thumbnails and to link them with the appropriate category ?

is this possible ?

Create them manually, name them the same as Phoca does and upload them to the thumbs folder.
