Navigating categories

I'm getting the hang of this Joomla stuff. Phoca is cool and I'm pleased with what I've been able to do quickly.

I've organized my photos as I would on my file system, by using categories like folders and then putting the photos in the "leaf" category of each branch. You can see here http://www.nbrowingclub.com/index.php?o ... s&Itemid=3

But what I'd like to be able to do is have the initial page show just the two top level categories, and then have the user drill down each sub category until they get to the one with the photos. This will allow me to add a lot more photos over time without cluttering the first page.

I've read various topics on this forum which seem to be the same request and I can only apologise that I couldn't figure out whether this is actually possible or not!
